Everything You Need to Host a Healthy Weekend Brunch for Spring
March 14, 2023
Perhaps it’s warmer weather or something else entirely, but, if you’re anything like us, you’ve recently been struck by a need to revisit brunch. Call it what you’d like—nothing says spring quite like fresh ingredients, floral tablescapes, and reuniting over great food with better friends. This year, in an effort to elevate our favorite weekend meal, we’ve called on Sweet Laurel Bakery for a delicious and better-for-you take on two sweet and savory classics—a gluten-free breakfast quiche and gluten-free chocolate cake. For all the healthy menu inspiration you’ll need, as well as our step-by-step guide to setting a simple yet festive seasonal table, read on—and be sure to bookmark for later.

The Tabletop
We wanted this everyday scene to feel simple yet seasonal, so we focused on a pared-back aesthetic. For florals, all that was needed was a ceramic vase and branches of white quince, which played off of our Sierra Dinnerware, Frayed Napkins, and Sabre Bistro Vintage Finish Cutlery Set in Ivory.
We chose to ground the scene in a casual flair with our Fine Braided Placemats, which instantly create a sense of invitation. Always eyeing the details, we added a few finishing touches to the scene to pull it all together, one of which was Jenni’s latest tabletop favorite: the Ceramic Napkin Rings from Stacie Krajchir.
For the final additions, we made sure to place our go-to glassware—the Straight Rock Glasses—on the table, as well as the Butler Salt and Pepper Spice Mills from De Jong Co.

The Menu
Sweet Laurel’s Laurel Gallucci is one of our favorite chefs to call on for brunch menu ideas, and this healthy brunch lineup she thought up was our definition of seasonal perfection. Her gluten-free quiche recipe packs all sorts of flavor, and when served alongside a simple salad and grain-free kefir crackers, it delivers on all things delicious.
For a dose of something sweet, Laurel made mini flourless chocolate cakes for guests to enjoy. Tip: these single-serving cakes make perfect parting gifts. If dessert isn’t making its way onto your menu, package each cake in a cardboard box with a simple ribbon—your guests will surely enjoy the treat later on in the day or week.
